- 2 cups coarsely chopped organic carrots
- 1/2 cup organic shallots, halved
- 4 cups organic cabbage, sliced into wedges
- 1/4 cup chopped organic parsley
Directions:
- Begin by preparing the beef. Cut the chuck roast into 3 to 4-inch pieces and blot them dry with a paper towel.
- Heat the ghee or avocado oil in a 5-quart Dutch oven over medium-high heat for 3 minutes.
- Brown the beef pieces for 2 minutes on each side in the Dutch oven. Once browned, transfer the beef to a plate and set aside.
